Many people think that barbecues have to do with meat and beer, but for me, the outdoor dining room is fresh, seasonal foods and light and healthy meals. So, whether he is organizing a great barbecue for all his friends, that is, a guest and because to take something light and healthy, every love, the next two recipes should the place. First is the wild rice salad recipe of my book Eat Beautiful, which is always a success thanks to the mixture of public and brown rice public services. The next is my frozen banana lollipop, also of my book, which are a lovely summer dessert alternative that has skin ingredients and are as delicious as commercial ice lollies. They are excellent to show off the guests in a barbecue. Enjoy!

Wild rice salad
This is one of my friend’s exclusive dishes and is a true winner. The beautiful wild rice texture works so perfectly, a great addition to a summer barbecue.

It serves 2
440 calories per portion
Wild rice of 100 gy brown rice of 100 g
(Or 200 g of mixed brown and wild rice)
1 tablespoon pistachos
Juice or 1/2 lemon
Handful of fresh mint, sharply chopped
Handful of rocket, sharply chopped
1/2 Clavo of garlic, finely chopped
2 handfuls or three fruits, such as raisins, goji berries, sultaas or three chopped apricots
1 tablespoon of extra virgin olive oil
Marine salt and black pepper
- Boil each rice in slightly salty water following the instructions of the package. Drain and rinse with cold water.
- Meanwhile, toast the pistachios in a dry pan over medium heat for 2-3 minutes, frequently throwing so that they do not burn. Remove and crush slightly.
- Place the rice in a bowl to serve, add the lemon juice, mint, rocket, garlic and dry fruit, and combine well.
- Sprinkle on the oil, then season and sprinkle the toasted nuts on the top to serve.

Frozen banana lollies
It serves 6
102 calories per portion
400 ml of coconut or almond milk without sugar
2 large bananas, peeled
2 tablespoons of hurry honey
1 teaspoon vanilla extract
1 tablespoon of grated coconut
Handful of ground hazelnuts (or extra grated coconut) to wet
This frozen mixture of banana puree, coconut cream and honey is a wonderfully creamy pleasure during the summer months. It is as sweet as a commercial ice cream but with a natural and interesting flavor with a lot of skin feed activities as well.
- Pour half of the milk in a food processor and add bananas, honey and 1/2 teapoon or vanilla extract, then process until soft.
- In a bowl, mix coconut milk and vanilla extract.
- Divide the banana mixture between six molds of Lolly.
- Place the coconut mixture at the top of the banana mixture, after leaving in a freezer for at least 6 hours or until it is completely frozen.
- Remove the pockets of your molds by immersing the issue in warm water for 10 seconds. Incline the ground hazelnuts (or grated coconut) in a deep bowl, then immerse the upper of 5-8 cm or each shovel in the nuts to cover.
- Place the pirates in the freezer to establish. They will be ready after 5 minutes or when you feel like one.
